Since Anaconda had a license change, The Carpentries have changed their recommendation to use Conda-Forge.
We don't know for sure if we cannot use Anaconda at all; it can be installed or requested from the ISSC.
We do want to provide alternatives, including hosted notebook environments in case learners cannot get the local installation sorted.

This PR updates the installation instructions with alternatives for Anaconda (manual install of Python and Jupyter, EOSC- and Google-hosted Notebook environments) and notes on installing Anaconda or Python through ISSC solutions for laptops managed by Universiteit Leiden.

This closes #117 by adding additional packages to requirements.txt.
