simpler sbom for quickstart examples

The current docs/examples/quickstart sbom is too complex and does not follow best practices, such as including license information for all components. This gives users a bad experience when following some quickstarts in docs.chainloop.dev or in this repo, as they face violations that are not related to the quickstart that they are following.
