I have a question. I select NativeMap maps.provider=google for example. What kind of map will be display on real devices IOS?

No that won't work. On iOS we will show Apple Maps when you use native maps. Since it's builtin you won't need a key etc. and the APIs will still have the same portability. Is there a specific reason you would want Google Maps on iOS?

You can use:

android.maps.provider=google
ios.maps.provider=apple

yes. Nothing would like have two diferente maps. Actually I use google maps using cn1libs in both android and ios

Sure. Today there's no other option, but are you sure you want to keep doing that?

Google maps isn't free. It's a paid service where you need to setup an API key and get charged by usage. Native apple maps don't require a key and are free. They are far better than the original launched version on iOS and are now considered to be a superior experience by most iOS users (not sure if this stretches to all locales though).

Notice that it would also increase your app by adding a Google dependency to iOS builds, so longer builds and larger app.

This is something we can add back if it's really important to you.
