-These changes now require node v16 or greater. -Replaced the now unmaintained `faker` library with `@faker-js-faker` -Made necessary tweaks to make everything work with the updated packages

Security is important. It has been almost a year since I've last updated this repo so this PR aims to update packages to avoid potential vulnerabilities while also reducing future maintainence burdens.
