Generalize Options for Overrides

It's in our best interest to have values.yaml give the option for not only container resource sizing but also image and image command definitions. Allowing overrides here on each service will eliminate the need for PRs in the future. Better to do it now.

AC:

• for the db entry add image options like the other services provide
• for all service entries add command entry override to expose these options . However --root-path should still be handled with an ingress.className check as it already is here
• other places to generalize?
