What

We currently have a workflow_dispatch manual workflow that does the releases after we manually bump versions and manually write release notes. Let's automate all of this with GH releases and find the write plugins to manage versions for us in the helm chart

• find a plugin that handles helm chart and application version updates for us based on tags maybe? or PR labels maybe?
• rewrite the existing release.yaml workflow to work off the release hook in GH
• GH should also write CHANGELOGs
