Missing VC data model 2.0 support upon issuance

Is there a reason the data model 2.0 is not yet supported upon issuance yet?
i.e. afaiu. you can pass a 2.0 credential manually with validFrom and until to the issue function

VCDM 2.0 is presently supported and is being used by higher-level implementations to issue 2.0 VCs today. Can you give a specific code example of what isn't working? Perhaps there's a specific bug that can be fixed.

This example script could perhaps be modified to demonstrate the issue: https://github.com/digitalbazaar/vc/blob/main/examples/rt.js

We should ensure we update that script (or add another) to show a v2 VC anyway -- so I'll file an issue for that.

It works fine by just passing validUntil by yourself. So no urge to change. I will do a PR for facilitate things
