Description
Did a pass to rewrite most of the documentation on the MCP Toolkit and MCP Gateway.
This is a first revision to try and help clarify the different concepts involved and remove redundancies.
I'll create follow-up PRs to improve the setup instructions for connecting/verifying MCP Toolkit connections for clients,
which is why I didn't really touch the MCP Toolkit get started and examples sections in this pass.
