update for compatibility with langchain 1.0

LangChain 1.0 has been released. This package needs to be updated to be compatible with it. Currently, this project depends on langchain-core>=0.3.0,<0.4.0 so it can't be installed on a project with LangChain 1.0.x.

the langchain and docling integration is awesome. However LangChain 1.0 is a significant release, we really appreciate if this package can support it as soon as possible.
