Install elasticsearch has links to 9.0.0, wrong substitution? #2051

Description

Type of issue

None

What documentation page is affected

https://www.elastic.co/docs/deploy-manage/deploy/self-managed/install-elasticsearch-from-archive-on-linux-macos

What happened?

We are suggesting links to 9.0.0 in our install instructions.
I see we are using {{stack-version}} substitution, so maybe we should update {{stack-version}}, which points to 9.0.0, together with stack releases?

Now I think the version should be 9.0.3.

An extra suggestion for that doc would be to add a super useful link to https://www.elastic.co/downloads/elasticsearch, so the user can check available versions or install a past release.
