replaced outdated/legacy references since logging and metrics start using datastreams in 3.8. There is room for improvement but kept it simple for now.

agree we could refine this in future (e.g. this page should probably mention ece logging/metrics templates and we can xlink them together) but this is good for now

I can submit a 3.8 asciidoc equivalent.
There is room for improvement but kept it very simple for now.
