Remove the workaround for environment variable injection issues in beats

https://github.com/elastic/elastic-agent/pull/11204 fixes a problem related to running the metricbeat prometheus input for collector Otel Collector metrics in a beat process through a nasty hack. We should drop the hack once we have a more maintainable solution in place.
