[ DOCS] Align chunk settings in Inference API and semantic_text documentation #116301

As per this Slack thread
The Inference API and semantic_text documentation describe default chunk settings differently, which may cause confusion:
- Inference API: Documents are split into 250-word sections with a 1-sentence overlap.
- semantic_text: Documents are split into 250-word sections with a 100-word overlap.
Action
Update both documentation sets to direct users to the chunking settings in the Inference API documentation for consistent reference to default settings.
