fix: update dependencies across multiple packages

- Upgraded various dependencies in package.json files for workshop-app, workshop-cli, workshop-mcp, workshop-presence, and workshop-utils to their latest versions, including @nx, eslint, react-router, and vitest.
- Improved compatibility and performance by updating @types/node and other related packages.
