test: fix generated-config test and default config for updated schema

Prepares for #1243 by correcting configs used in tests, that currently contain extraneous properties and will fail to validate during the tests once teh config schema and types are corrected. It should be merged first to enable checks on the other PR to pass before it is also merged.
