Missing 4.1 container images

https://docs.fluentbit.io/manual/installation/downloads/docker jumps from 4.0.13 to 4.2.0

This should be automatically updated via PR as part of the release process so need to check if the PRs failed for some reason.

The update version script at repo root is invoked by the release process
