Workflow granular progress status

Currently it's possible to check whether a workflow is in progress, cancelled, errored or successfully completed/

It would be great to have more granularity for the in-progress state, e.g. the step the workflow is on, what percent of steps have been completed, etc. Ideally, if the historical latency of steps is being measured, it could even be possible to estimate the ETA to complete a workflow which would be very useful to present to the user, along with a pretty accurate progress indicator.

There's now an API to list all the steps, and tracking historical runs of the workflow seems like a cool idea - maybe update statistics about it in the onComplete. The tracking is possible to do outside of the component (e.g. enqueue a mutation from the onComplete to paginate the steps, summarize, then clean up the workflow), so I'm going to hold off on building that in for now.
Because it's code with conditionals, loops, etc. it reduces to the halting problem in the general case.
But if you know for your workflow that it will have the same number of steps as a previous run, you can track and surface that.

Maybe one feature here would be to be able to list workflows by name, to easily find previous runs, but again it's something you could drop in a table when starting / finishing a workflow.
