[4.2] Point to docs.hibernate.org instead of docs.jboss.org/hibernate in various docs

there's a bit more than just the docs server link update. I've notcied that we wer still pointing to the older JDK/Bean Validation/JPA versions so I adjusted those links.
The other commit about using ORM version in the adoc files.. I think that that's what we'd want to point to the docs of a "compatible" version of ORM, but if there was a reason to keep the versions fixed I can revert that part 🙂

oh and we should backport at least the docs server url change to the other branches we release from... so if you are fine with the change ... I can try backporting 🙂 🫣

The branches we are releasing now are: 4.1,3.2,3.1, and 2.4

I'm planning to disable the jobs for 4.0 and 3.0, so I think you can skip those.
