The idea with defaulting to virtionet is that qemu will add a default (Intel) network device anyway, unless you explicitly ask it not to. Since most of our services have a single network interface it seems nice not having to specify vm.json for those.
Mac addresses should always have been optional - they were never required by the schema but implicitly in the code.
