Unable to located logged record information

I've setup logging and have captured log events but I'm unable to see where the record data that I'm logging is located.

The flow utilised the "Add Log Entry for an SObject Record Collection" and I can see the Log and Log Entry records, however, on the Log Entry record there's a JSON representation of the. I'm running all this through my admin profile and have granted myself the Admin permission set from the installed (latest version) of the managed package.
