Currency: Update kube dependency to 1.1.0 (latest)

As a general point of feedback, since most projects which depend on `gateway-api` are likely also using `kube` to build controllers, and we cannot upgrade one without the other, it would be nice if `gateway-api` could release an update any time `kube` ships a new version to keep them in-sync.
