What's the proper way to configure JDK on MacOSX 10.13+? #67

Hello,
This document doesn't appear to work for me or any of my students running Mac OSX 10.13 - 10.15. What is the proper way to configure the JDK? This also needs to be updated for adoptopenjdk.net, and allow for systems running multiple JDK's.
The successful workaround we've implemented for systems with multiple openjdk installations is described in this PR.
