fix: make homebrew tap version output robust

Summary

• replace the inline echo $(node -p ...) version capture with an explicit assignment
• make the workflow fail immediately if version resolution breaks
• keep the Homebrew tap update independent from the open release PR

• npm test
• npm run format:check
• manual shell check for GITHUB_OUTPUT version capture
