Clean indexer documentation

• Reorganize documentation into concepts, tutorials and reference
• Remove all references to the near lake indexer as nobody outside from Pagoda / Aurora will want to run such an indexer
• Add a section for NEAR Indexer on concepts
• Add a tutorial on NEAR Indexer on tutorials that is consistent with the near lake framework tutorials
