How can i remove or change the username (handle) right next to my name?

Go to settings, like https://github.com/settings/profile and you will find profile options.

i already changed my username on the settings and public profile, but the handle in my case (giuliohard), just keep showing up there.

you can change your username in admin settings under the Change username section.
just make sure you are aware of the side effects.
