Implement a restore backup process that works !

Describe the feature

Right now the backup/restore process in HA/HAOS works already quite well but it has serious issues/drawbacks:
-> no monitoring anywhere even in Supervisor logs
-> able to backup some DB (in MariaDB addon) that are 10G large but unable to restore them (both in onboarding process or individual restore in HA).

Use cases

Be able to restore properly and easily sensors history stored in MariaDB add-on.
