Bulk Actions Remove Value From Field?

Is there a way in bulk actions or other method to remove the value from a field for selected transactions? Mainly I'm looking to remove the "vendor" from a group of transactions and make this field blank. I also had a case where I tried to bulk remove the category and make it unassigned but could not find a way other then updating each transaction one at a time.

Leaving the field blank on the bulk editor obviously results in no change which is as it should be. I don't even know what a good way to implement value removal would be if there is not already a method.
