Added support for WASI SDK versions 26 and 27, with version 27 now set as the default.

Changes implemented:

Added WASI SDK 26 and 27 support:

• Added SHA256 checksums for all supported platforms (macOS arm64/x86_64, Linux arm64/x86_64)
• Both versions are now available for use

Made WASI SDK 27 the new default:

• Updated default version across all configuration files
• , , and toolchain configurations now use version 27
• Maintains full backward compatibility with existing versions

Testing:

• ✅ Build with WASI SDK 27 (default):
• ✅ Build with WASI SDK 26 (explicit): Works correctly
• ✅ Component tests pass with new default

Users can now benefit from the latest WASI SDK features and improvements while retaining the ability to specify older versions if needed.
