Problem: direct copy of upstream repo values.yaml for kube-prometheus-stack to base-helm-configs. This is incorrect as we have moved to consuming charts from upstream repo's directly. Correct this file to only override what we want to override and remove all the default values for readability. Also, pin the chart version to ensure that we control when a new chart is consumed.
