Update 7-inch Touch Display with information on wvkbd

Turn the NOTE block in the Touch Display documentation into an actual section talking about how to use an on-screen keyboard now we know that wvkbd works under Wayland.

The new "on screen keyboard" section should go just before the "screen orientation" section, with the existing NOTE block getting subsumed into it along with the new information about wvkbd.

wvkbd is not listed in the menue. Since I've working with touchscreen I cannot call it without a keyboard via execute. Sorry, I don't know how to inetgrate it in the menue. Can someone please post a way?
