[Bug]: Bump Electron version to fix the bug MacOS 26

Preconditions
Redis Insight is still built using an Electron version that does not include the fix from electron/electron#48376.

Actual behavior
The bug fixed in Electron PR #48376 is still reproducible in Redis Insight because the application ships with an older Electron runtime.

Expected behavior
Redis Insight should no longer exhibit the issue once updated to an Electron release that includes the fix.
