Update template to use RenderCV version ≥ 2.0

Hi, @sinaatalay,

As the RenderCV backend was changed from LaTeX to Typst, can this template be updated to reflect the needed changes?

This seems apt to be a recurring release engineering problem. I think that probably either:

• A) Simplest option: simply don't populate src/ in this repo at all?
  • if expected usage is to have people setup an instance of this repo after local dev, then they are effectively expected to delete/replace everything in there anyway? (I mean, at least the yml)
  • if expected usage is for this to be the entry point into the workflow (absent using the web app, etc.) than ideal would be for GitHub template to start with user's name at on level w/ local rendercv new. Idk if such a thing is possible under template repos (doesn't look like it?)
• B) https://github.com/rendercv/rendercv/blob/main/.github/workflows/release.yaml should include a refresh of the starting file sin this repo (and a tag corresponding to the release?)
