some e2e tests were failing due to lack of disk space in the github runner. this commit hopefully solves all of them.

instead of keeping the whole configuration (roles, labels, etc) we only need to keep track of the k0s configuration overrides that were used at install time. this commit converts this type to a string as this is the format these are provided by the end user.
