This lets you define on a service level, and transitively on the endpoint level, the default serde to use

lgtm, I am not sure if default in defaultSerde is necessary specially if at some we introduce a global one, it's hard to name that one since defaultSerde is taken. I think it's enough to say this is serde at service level, and if handler has another serde we will use that.
