Upgrade Pydantic version to 2.11

Blocking the use of Pydantic 2.11 is preventing the use of Scalekit with other frameworks (e.g., CopilotKit) that require version 2.11.

Thank you for reporting this and for the PR! The Pydantic dependency has been upgraded from ~=2.10.6 to ~=2.11.2 in release v2.4.3 (via PR #94), which is now available on PyPI.
