Custom log levels possible?

I'm using serilog with my projects and trying to find a way to introduce a custom log level so I can dump my network packet data.

I think the log levels itself cannot be changed, but you can always enrich your events with your own properties which can represent some custom level.

So I can also filter them down? I want packet logs to be written to a specific file like packet-dump.log

Yes, there is a concept of filters; see https://github.com/serilog/serilog/wiki/Configuration-Basics#filters
So filter on the property and send those events to a file sink.
