Add Jackson 2 module to ease upgrade effort

Whilst we expect most users to be able to migrate to Jackson 3, we've received feedback that some users would prefer more time to do so.

We can introduce a Jackson 2 module to provide legacy support to help. The module will ship with deprecated code to align with Spring Framework's deprecated Jackson 2 support and so that we can remove it after 12 months.
