Jackson 2 support does not work in some sliced tests

These have been lost with the move to Jackson 3 but adding spring-boot-jackson2 module should provide some sort of support again.

It's not as easy as it sounds as mixing 2 and 3 doesn't seem to configure the infrastructure for MockMvc. We're investigating.
