Maybe switch samples to a better supported Maven protoc plugin

This one works: https://github.com/ascopes/protobuf-maven-plugin. I didn't see any Gradle support, but we are already using a different plugin for Gradle.

It seems to make sense to me, the current plugin we use in examples is archived (recently), so I like the idea.
