Bump Ruby LSP Version from 0.25.0 due to crashing formatter

This version of Ruby LSP included (0.25.0) crashes when formatting with recent versions of RuboCop.
Issues here and here

This was identified to be relate to re-using the Prism output, and was fixed in this PR and released in version 0.26.0
