[Feature Request] Clean up pyright exclude list

Ran into the CI lint failure mentioned in pyproject.toml

  # TODO: these pass locally but fail in CI with
  # error: Import "temporalio.bridge.temporal_sdk_bridge" could not be resolved

ended up switching the order of poe lint and poe build-develop in CI to resolve this issue.

Describe the solution you'd like

The list of excludes is quite long, with some substantial files. We should go through and clean up the list of files that need to be excluded here.
