Workspace screenshots in images/, the click path is a sequence diagram, the link
score is a formula. Stale bits fixed: worker-gpu.yml and GPU Docling (removed in
#30), the Funnel route is what prod runs today.

Rewrite the wiki as an explainer: concepts, tutorial, diagrams, current stack
Diátaxis layout (tutorial / how-to / explanation / reference), 13 mermaid diagrams,
every fact checked against main: NiceGUI ui on :8000, postgres only, plain env names,
llm-only extraction with receipts, eval numbers, deployment with placeholders only.
Running.md folded into Getting-Started.md (tutorial verified end to end through step 7)
