Fix checkpoint conversion UXR friction bugs

Fix some UXR friction bugs in checkpoint conversion:

• b/490520918: Add instructions to set HF_HOME path to avoid out-of-disk issue.
• b/490520830: Change HF_MODEL to MODEL_NAME to avoid confusion.
