Include 2025 "Kickoff" releases of all vendor libraries

Update all vendor libraries to 2025 "Kickoff" release version.

Run tests to find any additional breaking changes or unexpected behavior.

As of 10-Jan, all dependency vendor libraries with the exception of Photon Vision have released their 2025 kickoff versions. Photon Vision is waiting until "WPILib Week 1" update because of various issues.

It may be that we release our "Kickoff Version" still depending on PhotonLib's "beta 8".
