Purpose of this pull request

Updated Docker containers documentation to reflect current usage and structure.

Version Updates & Container Changes

• MariaDB/MySQL (db container): Updated from 10.0-10.6 and 5.6-8.0 to 10.6, 10.11, 11.4, and 8.0
• Elasticsearch container: Removed entirely (no longer supported)
• OpenSearch container: Streamlined versions from 1.1-3.0 range to 2.3, 2.4, 2.5, 2.12, 3.0
• PHP FPM (fpm container): Updated from 7.2-8.2 to 8.0, 8.1, 8.2, 8.3, 8.4
• Node container: Updated from versions 6, 8, 10, 11 to 14, 16, 18
• RabbitMQ (rabbitmq container): Updated from 3.5, 3.7, 3.8, 3.9 to 3.9, 3.11, 3.12, 3.13, 4.1
• Redis container: Updated from 3.2, 5.0, 6.0, 7.0 to 6.0, 7.0, 7.2
