[bug] evals quickstart needs update

• When launching Phoenix via the evals quickstart, no traces appear at first because the traces imported via TraceDataset are old. This makes it difficult to follow the quickstart.
• phoenix.TraceDataset is being deprecated, so we should find a way to ingest traces into Phoenix without this.
• There are several deprecation warnings throughout the notebook that should be cleaned up.
