Update Universal-1 FAQ to Universal-2 with new content and redirect

Summary

Renames the Universal-1 FAQ page to Universal-2 and updates its content to reflect current model selection behavior:

• Path change: /docs/faq/how-can-i-use-universal-1 → /docs/faq/how-can-i-use-universal-2 (file, slug, and nav entry in docs.yml all updated)
• Redirect: Added redirect from the old URL to the new URL so existing links don't break
• Content updates:
  • Removed outdated claim that Universal is the "default model"
  • Added note that speech_models parameter is now required (no default model), with link to Select the speech model
  • Added callout linking to Models overview
  • Added callout highlighting Universal-3-Pro

• Content accuracy: Confirm the statement "there are no default models for transcription" is factually correct and aligns with current API behavior. This is the highest-risk item — if there is still a default model, the page will be misleading.
• Verify internal links resolve: After deploy, confirm that /docs/getting-started/models, /docs/pre-recorded-audio/select-the-speech-model, and /docs/pre-recorded-audio/universal-3-pro all resolve correctly on the live docs site.
• Verify redirect works: After deploy, visit /docs/faq/how-can-i-use-universal-1 and confirm it redirects to /docs/faq/how-can-i-use-universal-2.

Suggested test plan: After merging and deploying, navigate to the old URL and verify the redirect. Then review the new page content and click each internal link to confirm they resolve.

• One non-required CI check (lint) fails due to pre-existing spectral errors in openapi.yml — same failure occurs on main.
