[ASIM] AssetEntity schema: bump to v1.0.0

Add three new fields to the ASIM AssetEntity schema (version 1.0.0):

• EntityKey (Optional, String): unique identifier for entity correlation
• EntityIdType (Mandatory, String): type of entity identifier
• EntitySnapshotId (Optional, String): snapshot identifier for the record

Files updated:

• ASimTester.csv: added schema test rows for the 3 new columns

• vimAssetEntityEmpty.yaml/json: added columns to datatable definition

• ASimAssetEntity.yaml, imAssetEntity.yaml: bumped version to 1.0.0

• CHANGELOG files: added v1.0.0 release notes
