I'd like to discuss this screen (Sorry, is in German, but I think you get its meaning):
When it comes to using encryption with ChatSecure, in my opinion it should be firstly very easy to activate and secondly easy to deactivate if something does not work, or you just want to not use it in this moment. Dino and Conversations for example offers a 'Lock' symbol to let the user quickly choose.
In ChatSecure you have to do at least 2-3 step - in case you know where it is. But most common users don't know it and this results in that this screen is pretty hidden, as I guess.
Thus I like to suggest the following:

Firstly, best thing would be to have such 'Lock' symbol in the direct chat, too.

Secondly, the choice for the user must be much easier. Right now, there are five things the user has to decide on, but most likely has absolutely no idea what it is. My first suggestion is, to get partly rid of all OTR choices. OTR should be at least put into a "Advanced Encryption" section, like all of those choices already are. Then, the only things which should be left are (at it's best if you tap a 'Lock symbol' from the chat screen):
- Unencrypted (don't use "Plain text" as this is not 100% clear for everyone that this is unencrypted!)
- Encrypted (OMEMO)
Furthermore, leave out "Best available" and just use OMEMO as standard, and only offer the user to pick Unencrypted if necessary. In case there is no encryption - rather warn the user than picking OTR. I won't recommend OTR as a plan B choice. This should be only opt-in for advanced users!
Finally, this would lead to a much better experience for most users in my opinion. Feel free to vote and comment.
