With the assistance of AI, I was able to launch and configure Amethyst in a semi working state for macOS. Downloading mods and collections from Nexus, identifying games installed via Crossover bottles, deploying (Hardlink Deploys), and finally, macOS native LOOT sorting.
I'm a bit skeptical and paranoid about pushing up these changes, though. I can make a fork and push it up to my own repository if anyone is curious and would like to have a gander. I have NOT done proper code reviews, but I have used this like a normal(ish) person for about two days - and it's been great (with some quirks, I'll try to open issues.)

Hooking in the "Proton" and "Wizard" buttons into macOS are my next steps. Getting LOOT sorting working was a big enough victory for me - I also verified the LOOT sort output for GTS on both Amethyst and Vortex, and they appear to be consistent!

Let me know if you would like to see more, this is a really nice mod manager that actually works. The important part is that Skyrim SE ran with over 2k mods, and did not crash.
